Firstly, spoke to Cyrus Todiwala FIH about how sustainable Café Spice Namasté, Cyrus and Pervin Todiwala’s 60-seater restaurant, bringing the tastes and flavours of Bombay, Kerala, Goa and the Todiwala’s Parsee cuisine to Docklands, London is.
We relocated to Docklands at the beginning of 2022 and were determined to save as much as they could of the restaurant’s original furnishings.
As well as using salvaged material for much of the restaurant, our son Jamsheed Todiwala created the bar out of planks of wooden palates and made all the shelves and storage units from reclaimed wood.
Pervin and I have been recycling since 1992, and are committed to sustainability through our choice of seasonal, locally sourced ingredients, choosing suppliers who share our ethos for the environment and the planet. These include Aqua Libra, Rhug Estate, and members of the British Lop Pig Society and the Marine Conservation Society.
We are always striving to do more though, and as such, are planning on introducing a bottle return scheme for local residents.
We are also looking into getting a wet waste recycling machine funded. Turning all wet food waste into compost for the plants that grow around the restaurant.
Next, we chatted with Naseem Talukdar MIH, founder of Projects Against Plastic (PAP) who are finding ways to reduce single-plastic use in the hospitality sector, on what they’d been up to recently.
The theme for Earth Day 2023 is “Invest in Our Planet.” Something that I firmly believe in… Projects Against Plastic has launched a #PlasticFreeRamadan campaign to invest in our communities on our planet. Islam is the fastest growing religion in the world and there are more than 500 mosques alone in the UK, proving facilities for breaking fast feast during the month of Ramadan and becoming the beacon of the local Muslim communities.
Our nation-wide campaign is to reduce the usage of single is plastic by installing water fountains and using reusable equipment’s while educating and raising an awareness to the participants and the communities through various visual aid and comms including Friday sermons.
Our digital poster has been circulated to various mosques in UK. We are hoping to organise a Tree Planting event at the end of the year with the mosque to engage and educate further in 2023 by acting planting trees.
Lastly we asked Vandana Dass, of Davenport Solicitors whether sustainability has to be pushed to the bottom of the priority list on a tight budget.
In my opinion, it shouldn’t have to cost much to be sustainable. It really depends on the size of the organisation and the budget.
We can start at very little cost, recycling doesn’t cost a lot. For example, making sure you use less plastic… Many of our hospitality clients have got rid of disposable plastic toiletries bottles in favour of reusable bottles. Sustainability targets can be met and it doesn’t have to cost the earth.
Sustainability is certainly part of Davenport Solicitors’ vision and strategy. We all can do our bit for the environment, and are in the position to do so. We involve the team in discussions on how to be more sustainable and work together to make sure our sustainability target it met.
