In view of the increasing popularity of solid fuel fired catering equipment such as wood burning pizza ovens and charcoal grills and ovens, CEDA, in conjunction with HETAS, have recently compiled a comprehensive document covering the safe installation, operation and maintenance of this type of equipment.
There are several potential risks with this type of equipment, the two most serious are the high levels of CO that are produced particularly when the fuel is dying and the creosote that is generated from burning wood which is highly flammable and sticks to the inside of ventilation ducting.
