10 July 2018

50% discount for Institute members

In view of the increasing popularity of solid fuel fired catering equipment such as wood burning pizza ovens and charcoal grills and ovens, CEDA, in conjunction with HETAS, have recently compiled a comprehensive document covering the safe installation, operation and maintenance of this type of equipment.

There are several potential risks with this type of equipment, the two most serious are the high levels of CO that are produced particularly when the fuel is dying and the creosote that is generated from burning wood which is highly flammable and sticks to the inside of ventilation ducting.

The document covers the following:

  • Applicable Regulations
  • Current Documents providing guidance
  • Types of Solid Fuel Fired Catering Equipment
  • Choosing Solid Fuel Fired Catering Equipment
  • Positioning/Location of Equipment
  • Ventilation Requirements
  • Operating and Shutting Down the Equipment
  • Ventilation Control
  • Ductwork Cleaning
  • Solid Fuel (Types – Storage – Handling)
  • Ash Removal
  • Cleaning
  • Power Cuts
  • Maintenance
  • Sources of Information

The document is available from the CEDA office (email peterkay@ceda.co.uk)

The price is normally £50 + VAT, however members of the Institute of Hospitality are offered a 50% discount by quoting the code IOH50%
