A Passion to Inspire’ Winner 2023 announced

Colchester Institute has won ‘A Passion to Inspire 2023’ after triumphing over fellow finalists Suffolk New College, Cambridge Regional College, West Suffolk College, City College Norwich and New City College Hackney.

The winning team of Sophia Bearman, Stephanie Etherington and Jess Hornsby delighted the judges with a three-course menu of:
Baron Bigod, pea & asparagus tart, pea & truffle purée to start. Followed by a Rack of Dingley Dell pork, Pommes Anna, roasted baby vegetables, black pudding stuffing, sauce Robert and a dessert of passion-scented spheres, shortbread crumb, and compressed mango to finish.

The judges this year were: Mark Poynton, Bradley Dorrington, Nick Mills, Greg Anderson, Eric Snaith, Buzz, Nick Claxton Webb and Ed Keith.

Judge Mark Poynton, Chef Patron at MJP the Shepherds said: “I am so very proud to be part of a magnificent lineup of talented young people. The aptitude and attitude of all the finalists were simply amazing. Their work ethic and teamwork were stunning! It was a hard day judging, my taste buds had a fantastic day, and all the skills on show in the kitchen and the service were wonderful.”

Judge Bradley Dorrington, Owner & Director, of The Wine Cellar, BSE added: “This year’s competitors raised the bar higher than ever. Specifically Front-of-House. The student’s knowledge and skills were exemplary. This year they all showed great cooking ability across the board and I for one was so pleased to see what the future of our industry looks like. All the competitors and colleges should be incredibly proud of what they achieved. Having a number of Level 1 and 2 students compete as well, is fantastic and I hope to see them back next year!”

The lucky winners receive a ‘Skills for Chefs 2023’ session with culinary legend Marco Pierre White and other Great Chefs Sally Abe, Henrique sá Pessoa, Andrew Gravett, and Luke French, Chefi Knife rolls, Mark Poynton’s cookbook The Great Culinary Journey and a very special culinary trip to Lyon, France with Grande Cuisine Academy.

All the finalists received a host of additional chef-related gifts.
